Lemon Cream Filling:
- 2 large egg yolks
- 1 can (14 oz) sweetened condensed milk
- ½ cup fresh lemon juice (about 2–3 lemons)
- 1 tablespoon lemon zest
- ½ teaspoon vanilla extract
- Pinch of salt
- Powdered sugar, for dusting
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C).
- Prepare the Crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a lined baking pan and bake for 10 minutes.
- Make the Filling: Whisk egg yolks, condensed milk, lemon juice, zest, vanilla, and salt until smooth.
- Assemble and Bake: Pour filling over crust and bake for 15-18 minutes. Cool and refrigerate for 2 hours.
- Serve: Dust with powdered sugar, slice, and enjoy!

- For a thicker crust, increase graham crumbs to 2 cups and butter to 8 tablespoons.
