Ingredients:
- 1 cup unsalted butter (softened)
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- Extra granulated sugar for sprinkling (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Prepare the dough: In a large bowl, beat the softened butter and powdered sugar together until light and fluffy. Mix in the vanilla extract. In a separate bowl, whisk together the flour and salt, then gradually add the dry ingredients to the wet, mixing just until a soft dough forms.
- Shape and bake: Scoop dough by tablespoonfuls and roll into balls. Place them on the prepared baking sheets about 2 inches apart. Flatten each cookie gently with the bottom of a glass or fork. Sprinkle lightly with granulated sugar if desired. Bake for 12–14 minutes or until the edges are just beginning to turn golden.
- Cool and enjoy: Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- These cookies freeze well and can be dipped in melted chocolate or sandwiched with jam for variation.
- For a twist, add a touch of almond extract or lemon zest to the dough.
