Description

This Walking Taco Casserole is a delicious Tex-Mex inspired dish that combines all the flavors of a classic walking taco in a convenient casserole form. It’s perfect for a quick and easy weeknight dinner or a casual gathering with friends.

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1 cup water

Additional Ingredients:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 bag (about 8 oz) crushed tortilla chips
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup salsa
  • 1/2 cup sliced black olives (optional)
  • 2 green onions, sliced
  • Sour cream and chopped fresh cilantro for serving

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C).
  2. Cook the beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add taco seasoning and water, simmer for 5 minutes.
  3. Combine ingredients: In a large bowl, mix the cooked beef with black beans, corn, tortilla chips, half of the cheese, and salsa.
  4. Bake: Transfer mixture to a baking dish, top with remaining cheese and olives. Bake for 20–25 minutes.
  5. Finish and serve: Garnish with green onions and serve with sour cream and cilantro.
