- 1 scoop (about 30 g) vanilla protein powder
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- pinch of salt
Wet Ingredients:
- 2 large eggs
- 1/2 cup milk (dairy or non-dairy)
- 1 teaspoon vanilla extract
- 1 tablespoon honey or maple syrup (optional)
- coconut oil or butter for cooking
Instructions
- Prepare the Batter: In a blender, combine oats, protein powder, baking powder, cinnamon, and salt. Blend until oats are finely ground. Add eggs, milk, vanilla, and honey or maple syrup, then blend until smooth. Let the batter rest for 5 minutes to thicken slightly.
- Cook the Pancakes: Heat a nonstick skillet or griddle over medium heat and lightly grease with coconut oil or butter. Pour 1/4 cup of batter for each pancake onto the skillet. Cook for 2–3 minutes until bubbles form on the surface, then flip and cook for another 1–2 minutes until golden and cooked through. Repeat with remaining batter.
- Serve: Serve warm with fresh fruit, nut butter, or sugar-free syrup.
Notes
- Batter thickness may vary depending on protein powder type—add a splash more milk if too thick.
- For fluffier pancakes, separate the eggs and fold in whipped egg whites after blending.
