Description

This Tzatziki Chickpea Salad is a refreshing and satisfying dish that combines the creaminess of Greek yogurt with the crunch of fresh vegetables and protein-packed chickpeas. Perfect for a light lunch or as a side dish for any meal!

For the Tzatziki Dressing:

  • 1 cup plain Greek yogurt
  • 1 cucumber, grated and excess liquid squeezed out
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped

  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

For the Salad:

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • ¼ cup finely chopped red onion
  • ½ cup cherry tomatoes, halved
  • ¼ cup sliced Kalamata olives (optional)
  • ¼ cup crumbled feta cheese (optional)
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Prepare the Tzatziki Dressing: In a medium bowl, whisk together Greek yogurt, cucumber, garlic, dill, lemon juice, olive oil, salt, and pepper.
  2. Assemble the Salad: In a large bowl, combine chickpeas, red onion, cherry tomatoes, olives, and feta if using. Pour the tzatziki dressing over the chickpea mixture and toss gently to coat.
