- ½ cup cherry tomatoes, halved
- ¼ cup sliced Kalamata olives (optional)
- ¼ cup crumbled feta cheese (optional)
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Prepare the Tzatziki Dressing: In a medium bowl, whisk together Greek yogurt, cucumber, garlic, dill, lemon juice, olive oil, salt, and pepper.
- Assemble the Salad: In a large bowl, combine chickpeas, red onion, cherry tomatoes, olives, and feta if using. Pour the tzatziki dressing over the chickpea mixture and toss gently to coat.
- Chill and Serve: Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld. Garnish with fresh parsley before serving.
