For the Tuscan Garlic Chicken:
- 4 boneless skinless chicken breasts
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil
- 1 tablespoon butter
- 4 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 2 cups baby spinach
- 1/2 cup heavy cream
- 1/3 cup grated Parmesan cheese
- 1/4 cup sun-dried tomatoes (chopped)
For the crispy potatoes:
- 1 1/2 pounds baby potatoes (halved)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary or thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C). Toss the halved baby potatoes with olive oil, garlic powder, rosemary, salt, and pepper. Roast for 35–40 minutes until golden and crispy, flipping halfway through.
- Season chicken breasts. Sear in olive oil until golden and cooked through. Set aside.
- Sauté garlic, tomatoes, and spinach. Add cream, Parmesan, and sun-dried tomatoes. Simmer and return chicken to the skillet.
- Serve. Spoon sauce over chicken and serve over crispy potatoes.
Notes
- For extra flavor, deglaze the skillet with white wine before adding cream.
- You can substitute kale for spinach.
