For the Tuscan Garlic Chicken:

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 2 cups baby spinach
  • 1/2 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes (chopped)

For the crispy potatoes:

  • 1 1/2 pounds baby potatoes (halved)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary or thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Toss the halved baby potatoes with olive oil, garlic powder, rosemary, salt, and pepper. Roast for 35–40 minutes until golden and crispy, flipping halfway through.
  2. Season chicken breasts. Sear in olive oil until golden and cooked through. Set aside.
  3. Sauté garlic, tomatoes, and spinach. Add cream, Parmesan, and sun-dried tomatoes. Simmer and return chicken to the skillet.
  4. Serve. Spoon sauce over chicken and serve over crispy potatoes.

Notes

  • For extra flavor, deglaze the skillet with white wine before adding cream.
  • You can substitute kale for spinach.
