For the Chili:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 3 garlic cloves, minced
  • 1 pound ground turkey
  • 2 tablespoons tomato paste
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (8 oz) can tomato sauce
  • 1 cup chicken broth or water
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

For Toppings (optional):

  • Chopped green onions
  • Shredded cheese
  • Sour cream

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the onion and bell pepper, and sauté for 4–5 minutes until softened.
  2. Stir in the garlic and cook for 30 seconds until fragrant.
  3. Add the ground turkey and cook until browned and no longer pink, about 5–6 minutes, breaking it up as it cooks.
  4. Stir in the tomato paste and cook for 1 minute.
  5. Add the diced tomatoes, kidney beans, black beans, tomato sauce, chicken broth, chili powder, cumin, paprika, salt, black pepper, and cayenne if using.
  6. Bring to a boil, then reduce heat to low and simmer uncovered for 25–30 minutes, stirring occasionally, until thickened and flavorful.
  7. Serve hot with desired toppings.

Notes

  • For a thicker chili, simmer longer uncovered.
  • This recipe is great for meal prep and freezes well for up to 3 months.
  • Adjust the spice level to your preference by adding more or less cayenne.
