- 1/2 cup shredded pepper jack cheese

- 1/4 cup corn kernels (fresh, canned, or frozen and thawed)
- 1/4 cup diced tomatoes
- 2 tbsp chopped green onion
- 1/4 tsp cumin
- 1/4 tsp chili powder

Instructions
- Mix Tex-Mex Filling: In a small bowl, combine black beans, corn, tomatoes, green onion, cumin, chili powder, and salt.
- Prepare Bread: Butter one side of each bread slice.
- Assemble Sandwich: Place slices butter-side down, layer cheeses, Tex-Mex mixture, remaining cheese, and top with second bread slice.
- Cook: Grill over medium heat for 3-4 minutes per side until golden brown and cheese melts.
