Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix wet ingredients: In a large mixing bowl, cream together the peanut butter, softened butter, granulated sugar, and brown sugar until smooth and fluffy. Beat in the egg and vanilla extract until fully combined.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
  4. Form and bake: Scoop heaping tablespoons of dough and roll into balls. Place on the prepared baking sheet about 2 inches apart. Gently flatten each ball with a fork in a crisscross pattern. Bake for 9–11 minutes, until the edges are set and the centers look slightly underbaked.
