- 2 egg yolks
- 2 tablespoons honey
- 1 tablespoon cornstarch
- 1/2 teaspoon vanilla extract
- pinch of salt
For assembly:
- 1/2 cup lemon curd (store-bought or homemade)
- 1 cup fresh strawberries, hulled and sliced
- fresh mint leaves for garnish (optional)
Instructions
- Preheat oven and prepare tart shells: Preheat oven to 375°F (190°C). Combine flour, powdered sugar, and salt. Cut in cold butter, add water, press into tart pans, and bake until golden.
- Make the honey custard: Whisk together milk, egg yolks, honey, cornstarch, vanilla, and salt in a saucepan. Cook until thickened, then cool.
- Assemble the tarts: Spoon lemon curd into tart shells, top with custard, arrange strawberries, and garnish with mint. Chill before serving.

- Tart shells and custard can be made a day ahead.
- Use a piping bag for a cleaner custard layer.
- For extra shine, brush strawberries with warmed apricot jam.
