Bagel:

  • 2 everything or plain bagels (sliced in half)

Steak:

  • 8 oz thinly sliced steak (such as ribeye)

Additional Ingredients:

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter (divided)
  • 1 small onion (thinly sliced)
  • 4 large eggs
  • 4 slices American or cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Cook the Steak: In a skillet over medium heat, warm olive oil. Add steak slices, season with salt and pepper, and cook for 2–3 minutes until just browned. Remove steak from skillet and set aside.
  2. Caramelize Onions: In the same skillet, melt 1/2 tablespoon butter and add onion slices. Cook for 5–6 minutes until softened and lightly caramelized; set aside with steak.
  3. Cook Eggs: In another skillet or the same wiped-clean skillet, melt remaining butter over medium-low heat. Crack eggs into the skillet, season with salt and pepper, and cook to your preferred doneness (over medium is common).
  4. Assemble: While eggs cook, toast bagel halves. Layer steak, onions, and a slice of cheese on the bottom half of each toasted bagel. Top with cooked eggs and the other half of the bagel. Serve warm.

Notes

  • For extra flavor, spread a layer of garlic aioli or horseradish sauce on the bagel before assembling.
