Instructions
- Prepare the Dough: In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about 2–3 minutes.
- Add the Flavor: Add the egg, vanilla extract, and almond extract (if using), and mix until fully combined.
- Combine the Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until a dough forms. Divide the dough in half, shape into discs, wrap in plastic wrap, and chill for at least 1 hour.
- Bake the Cookies: Preheat the oven to 350°F and line two baking sheets with parchment paper. Roll out one dough disc at a time on a lightly floured surface to about 1/4-inch thickness. Use a star-shaped cookie cutter to cut out cookies and place them 1 inch apart on the baking sheets.
- Cool and Decorate: Bake for 8–10 minutes, or until the edges are just beginning to turn golden. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar or decorate with icing and sprinkles once cooled.
