- 1/4 teaspoon cayenne pepper (optional)

- 8 small flour tortillas
- 1 cup shredded lettuce
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup sour cream
- Hot sauce to taste
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Prepare the potatoes: In a large bowl, toss the potato cubes with olive oil, chili powder, smoked paprika, cumin, garlic powder, cayenne (if using), salt, and pepper until evenly coated. Spread on the baking sheet and roast for 25–30 minutes.
- Warm the tortillas: Warm the tortillas in a skillet or microwave.
- Assemble the tacos: Fill each tortilla with roasted potatoes, lettuce, cheese, tomatoes, sour cream, and hot sauce. Serve immediately.
Notes
- For extra flavor, add a squeeze of lime juice to the roasted potatoes.
- To make it vegan, use dairy-free cheese and sour cream.
