For the dip:
- 1 pound ground beef
- 1 tablespoon taco seasoning
- 1 (8 oz) package cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese
- 1/2 cup shredded pepper jack cheese
For the toppings:
- 1/2 cup diced tomatoes (drained)
- 1/4 cup diced red onion
- 1/4 cup sliced black olives
- 1/4 cup chopped green onions
- 1/4 cup pickled jalapeños (optional)
- Chopped cilantro for garnish
- Tortilla chips for serving
Instructions
- Preheat the Smoker: Preheat the smoker to 250°F.
- Cook the Ground Beef: In a skillet, cook the ground beef until browned, then stir in taco seasoning. Set aside.
- Prepare the Cream Cheese Base: Mix cream cheese, sour cream, and mayonnaise until smooth. Spread into a skillet.
- Layer the Dip: Add the ground beef, cheeses, tomatoes, red onion, olives, green onions, and jalapeños (if using).
- Smoke the Dip: Smoke uncovered for 45–60 minutes until cheese is melted.
- Garnish and Serve: Garnish with cilantro and serve hot with tortilla chips.
Notes
- You can substitute ground turkey or sausage for beef.
- For a stronger smoky flavor, try using hickory or mesquite wood chips.
- This dip can also be baked in the oven at 350°F for 25–30 minutes.
