Ground Beef Mixture:

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 garlic cloves, minced

Casserole Layers:

  • 4 medium potatoes, thinly sliced
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 ½ cups shredded cheddar cheese

Seasonings and Garnish:

  • 1 cup beef broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. Cook Ground Beef: In a skillet over medium heat, cook ground beef with onion and garlic until beef is browned. Drain excess fat.
  2. Layer Casserole: Grease the inside of a slow cooker and layer half of the sliced potatoes on the bottom. Add half of the beef mixture, beans, corn, and tomatoes. Spread half of the cream of mushroom soup and cheese. Repeat layers with remaining ingredients.
  3. Add Seasonings: In a bowl, whisk together beef broth, smoked paprika, chili powder, salt, and pepper. Pour evenly over the casserole.
  4. Cook: Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until potatoes are tender.
  5. Serve: Sprinkle with parsley before serving.

Notes

  • For extra flavor, use pepper jack cheese or add sliced jalapeños.
  • This casserole can also be frozen in portions for easy reheating.
