Description

These Savory Breakfast Pop-Tarts are a delicious twist on the classic sweet treat. Filled with scrambled eggs, bacon, cheddar cheese, and chives, these savory pastries are perfect for a hearty breakfast or brunch.

For the Pop-Tarts:

  • 2 sheets store-bought puff pastry (thawed)
  • 4 large eggs
  • 6 strips cooked bacon (chopped)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped chives
  • Salt and black pepper to taste
  • 1 tablespoon milk or cream (for egg wash)
  • Optional hot sauce for serving

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the filling: In a skillet, scramble two eggs with a pinch of salt and pepper until just set; remove from heat.
  3. Assemble the Pop-Tarts: On a lightly floured surface, roll out each puff pastry sheet slightly and cut into 6 equal rectangles. Place 6 rectangles on the baking sheet and top each with a spoonful of scrambled eggs, crumbled bacon, cheddar cheese, and chives. Cover each with a second pastry rectangle and press edges with a fork to seal. Cut a small slit on top of each to vent steam.
  4. Bake: Beat the remaining two eggs with milk to make an egg wash and brush over the tops. Bake for 18–22 minutes, or until golden brown and puffed. Cool slightly before serving.

Notes

  • You can swap bacon with cooked sausage or go vegetarian with sautéed veggies.
  • Add a little hot sauce inside or on top for extra flavor.
