Description

Ingredients

Italian Sausage:

1½ pounds

Olive Oil:

1 tablespoon

Red Bell Pepper:

1 (sliced)

Green Bell Pepper:

1 (sliced)

Yellow Bell Pepper:

1 (sliced)

Yellow Onion:

1 large (sliced)

Garlic:

2 cloves (minced)

Dried Oregano:

½ teaspoon

Dried Basil:

½ teaspoon

Red Pepper Flakes (optional):

¼ teaspoon

Salt:

½ teaspoon

Black Pepper:

¼ teaspoon

Chicken Broth or Dry White Wine:

½ cup

Tomato Paste (optional):

1 tablespoon


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sausages and cook until browned on all sides, about 8–10 minutes. Remove sausages and set aside.
  2. In the same skillet, add sliced peppers and onions. Cook for 6–8 minutes, stirring occasionally, until they begin to soften.
  3. Add garlic, oregano, basil, red pepper flakes (if using), salt, and black pepper, and cook for 1 more minute.
  4. Stir in tomato paste (if using), then deglaze the pan with chicken broth or wine, scraping up any browned bits.
  5. Slice sausages into 1–2 inch pieces and return them to the skillet. Cover and simmer for 10–15 minutes until sausages are cooked through and flavors are blended.
  6. Serve hot on their own or in hoagie rolls.
