Instructions
- Heat olive oil in a large skillet over medium heat. Add sausages and cook until browned on all sides, about 8–10 minutes. Remove sausages and set aside.
- In the same skillet, add sliced peppers and onions. Cook for 6–8 minutes, stirring occasionally, until they begin to soften.
- Add garlic, oregano, basil, red pepper flakes (if using), salt, and black pepper, and cook for 1 more minute.
- Stir in tomato paste (if using), then deglaze the pan with chicken broth or wine, scraping up any browned bits.
- Slice sausages into 1–2 inch pieces and return them to the skillet. Cover and simmer for 10–15 minutes until sausages are cooked through and flavors are blended.
- Serve hot on their own or in hoagie rolls.
