Ingredients

Pearl Onions:

2 pounds pearl onions,

Olive Oil Mixture:

3 tablespoons olive oil, 1 teaspoon salt, 1/2 teaspoon black pepper,

Parmesan Cream Sauce:

2 tablespoons unsalted butter, 2 tablespoons all-purpose flour, 1 1/2 cups heavy cream, 1/2 cup whole milk, 1/2 teaspoon garlic powder, 1/2 teaspoon dried thyme, 1/2 cup grated Parmesan cheese,

Additional:

1/4 cup breadcrumbs (optional), fresh parsley (chopped for garnish)


Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Prepare the onions: Place the peeled onions on a baking sheet, drizzle with the olive oil mixture, and roast for 25 to 30 minutes until golden and tender, stirring halfway.
  3. Make the Parmesan cream sauce: Melt butter, stir in flour to form a roux, whisk in cream and milk until thickened. Add garlic powder, thyme, and Parmesan cheese, then remove from heat.
  4. Combine and bake: Transfer the roasted onions to a baking dish, pour the Parmesan cream sauce over them, sprinkle with extra Parmesan and breadcrumbs if desired, and bake for 15 to 20 minutes until golden.
  5. Garnish and serve: Garnish with fresh parsley before serving.

Notes

  • For easier peeling, blanch pearl onions in boiling water for 1 to 2 minutes, then transfer to an ice bath; skins will slip off easily.
