These Reese’s Peanut Butter Chocolate Chip Cookie Bites are the perfect bite-sized treats combining the flavors of peanut butter, chocolate chips, and mini Reese’s peanut butter cups in a soft, cookie cup.

Cookie Dough:
- 1/2 cup unsalted butter (softened)
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips
Topping:
- 24 mini Reese’s peanut butter cups (unwrapped)
Instructions
- Preheat the Oven: Preheat the oven to 350°F and lightly grease a mini muffin pan.
- Mix Wet Ingredients: In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until combined. Fold in the mini chocolate chips.
- Form Cookie Cups: Scoop about 1 tablespoon of dough into each mini muffin cup and press lightly to form a small well.
- Bake: Bake for 10–12 minutes, or until golden around the edges.
- Add Topping: Immediately press a mini Reese’s peanut butter cup into the center of each cookie bite.
- Cool and Serve: Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
