Raspberry Almond Energy Bites:

  • 1 cup old-fashioned rolled oats
  • ½ cup almond butter
  • ¼ cup freeze-dried raspberries (crushed)
  • ¼ cup honey or maple syrup
  • â…“ cup finely chopped almonds
  • 1 tablespoon chia seeds
  • ½ teaspoon vanilla extract

Instructions

  1. In a medium bowl, combine the oats, crushed freeze-dried raspberries, chopped almonds, chia seeds, and salt.
  2. Add the almond butter, honey (or maple syrup), and vanilla extract. Stir well until everything is evenly mixed.

  3. If the mixture is too sticky, let it chill in the fridge for 10–15 minutes to firm up.
  4. Once firm, roll into 1-inch balls using your hands.

  5. Place on a parchment-lined tray and refrigerate for at least 30 minutes to set.
  6. Store in an airtight container in the fridge for up to one week.
