Instructions
- Pumpkin Mixture: In a medium bowl, mix pumpkin puree, brown sugar, and pumpkin pie spice until well combined.
- Whipped Cream: In a separate bowl, beat heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Assembly: Gently fold half of the whipped cream into the pumpkin mixture. In serving glasses, layer granola, pumpkin mixture, whipped cream, crushed gingersnaps, and pecans. Repeat layers if desired. Drizzle with caramel sauce before serving.
