Ingredients
Scale
For the Dough:
- 1 1/2 cups oat flour (or blended oats)
- 1/2 cup vanilla protein powder
- 1 tablespoon coconut flour
- 1 tablespoon sweetener of choice (like maple syrup or stevia)
- 1/4 teaspoon salt
- 1/4 cup unsweetened almond milk (plus more as needed)
- 2 tablespoons coconut oil or unsalted butter (melted)
- 1/2 teaspoon vanilla extract
For the Filling:
- 1/4 cup fruit jam (low-sugar or homemade), or 1/4 cup nut butter for a higher-protein option
For the Glaze (Optional):
- 1/4 cup powdered sweetener or protein powder
- 1–2 teaspoons almond milk
- sprinkles (optional)
Instructions
- Prepare the Dough: In a mixing bowl, combine oat flour, protein powder, coconut flour, sweetener, and salt. Stir in melted coconut oil (or butter), vanilla extract, and almond milk until a dough forms. Add more almond milk 1 teaspoon at a time if the dough is too dry. Roll the dough between two pieces of parchment paper to about 1/8-inch thickness.
- Fill and Seal: Cut the dough into equal-sized rectangles. Spoon jam or nut butter onto half the rectangles, leaving a border. Top with another rectangle and press edges to seal.
- Bake: Preheat oven to 350°F. Bake pop tarts on a lined sheet for 12–15 minutes until golden. Let cool.
- Glaze: Mix sweetener or protein powder with almond milk. Drizzle over cooled pop tarts and add sprinkles if desired.
