  • 1 1/2 cups oat flour (or blended oats)
  • 1/2 cup vanilla protein powder
  • 1 tablespoon coconut flour
  • 1 tablespoon sweetener of choice (like maple syrup or stevia)
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened almond milk (plus more as needed)
  • 2 tablespoons coconut oil or unsalted butter (melted)
  • 1/2 teaspoon vanilla extract

For the Filling:

  • 1/4 cup fruit jam (low-sugar or homemade), or 1/4 cup nut butter for a higher-protein option

For the Glaze (Optional):

  • 1/4 cup powdered sweetener or protein powder
  • 1–2 teaspoons almond milk
  • sprinkles (optional)

Instructions

  1. Prepare the Dough: In a mixing bowl, combine oat flour, protein powder, coconut flour, sweetener, and salt. Stir in melted coconut oil (or butter), vanilla extract, and almond milk until a dough forms. Add more almond milk 1 teaspoon at a time if the dough is too dry. Roll the dough between two pieces of parchment paper to about 1/8-inch thickness.
  2. Fill and Seal: Cut the dough into equal-sized rectangles. Spoon jam or nut butter onto half the rectangles, leaving a border. Top with another rectangle and press edges to seal.
  3. Bake: Preheat oven to 350°F. Bake pop tarts on a lined sheet for 12–15 minutes until golden. Let cool.
  4. Glaze: Mix sweetener or protein powder with almond milk. Drizzle over cooled pop tarts and add sprinkles if desired.

Notes

  • Store in an airtight container at room temperature for 2–3 days or refrigerate for up to 1 week.
  • Can be made gluten-free by using certified GF oats.
