This Poor Man Husband Casserole is a hearty and comforting dish that’s easy to make and perfect for a family dinner. Layers of pasta, a creamy cheese mixture, savory meat sauce, and melted mozzarella come together in a delicious baked casserole.

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 (24-ounce) jar marinara sauce

Cream Cheese Mixture:

  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese

Additional:

  • 8 ounces egg noodles or rotini, cooked and drained
  • 1 1/2 cups shredded mozzarella cheese

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C).
  2. Cook the ground beef: In a large skillet over medium heat, cook the ground beef with onion and garlic until browned. Drain excess fat and season with salt, pepper, and Italian seasoning.
  3. Mix cream cheese: In a bowl, mix cream cheese, sour cream, and Parmesan until smooth.
  4. Layer the casserole: In a greased 9×13-inch baking dish, layer half of the pasta, spread the cream cheese mixture, add remaining pasta, top with meat sauce, and sprinkle mozzarella over the top.
  5. Bake: Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden. Let rest before serving.
