Instructions
- Sauté Aromatics: In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic and sauté for 3–4 minutes until they become soft and fragrant.
- Add Broth and Vegetables: Pour in the vegetable or chicken broth, then add the peeled and diced potatoes, sliced carrot, and bay leaf. Bring the mixture to a boil.
- Simmer Until Tender: Reduce the heat to low and let the soup simmer for 15–20 minutes, or until the potatoes and carrots are tender when pierced with a fork.
- Prepare Sour Cream Mixture: In a small bowl, whisk together the sour cream and all-purpose flour until smooth. To temper the mixture, slowly add a ladle of hot soup broth into the sour cream mixture while whisking continuously to prevent curdling.
- Incorporate Sour Cream: Gradually whisk the tempered sour cream mixture back into the pot with the soup, ensuring it is fully combined.
- Add Pickles and Seasoning: Stir in the chopped dill pickles, pickle juice, salt, and black pepper. Simmer the soup for another 5–7 minutes, stirring often to blend the flavors.
- Finish With Fresh Dill: Remove the bay leaf. Just before serving, stir in the fresh chopped dill to brighten the flavors.
- Serve: Ladle the soup into bowls and serve hot, ideally accompanied by rye bread or crusty rolls for a complete traditional Polish meal.
