- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 green bell pepper, diced
- 1/2 pound Italian sausage, casings removed
- 1/2 cup sliced pepperoni, cut into quarters
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 3 cups low-sodium chicken broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon dried basil
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper, to taste
For Topping and Serving:
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Chopped fresh parsley or basil, for garnish
- Garlic bread or croutons (optional for serving)
Instructions
- Saute Aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and cook until softened. Stir in garlic and bell pepper.
- Cook Sausage: Add Italian sausage to the pot and cook until browned, breaking it up with a spoon. Add pepperoni and cook briefly.
- Simmer Soup: Pour in diced tomatoes, tomato sauce, chicken broth, Italian seasoning, basil, and red pepper flakes. Season with salt and pepper. Bring to a boil, then simmer for 15–20 minutes.
- Serve: Ladle the soup into bowls and top with shredded mozzarella, Parmesan, and fresh herbs. Serve with garlic bread or croutons for a pizza-like touch.
