  • 1 cup all-purpose flour

  • 1/2 cup brewed strong coffee (cooled)
  • 1/2 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract

For the frosting:

  • 1 cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1/2 teaspoon peppermint extract
  • 1/4 cup unsweetened cocoa powder
  • crushed peppermint candies for garnish
  • mini chocolate chips or chocolate shavings (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with 12 cupcake liners.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a large bowl, mix granulated sugar, brown sugar, coffee, buttermilk, oil, egg, vanilla extract, and peppermint extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the batter evenly among cupcake liners and bake for 18–20 minutes until a toothpick comes out clean.
  6. Let cool in pan for 5 minutes before transferring to a wire rack to cool completely.
  7. For the frosting, beat softened butter until creamy and gradually add powdered sugar and cocoa powder.
  8. Add peppermint extract and heavy cream, beat until fluffy, and frost the cooled cupcakes.
  9. Garnish with crushed peppermint candies and optional chocolate chips or shavings.
