Topping:

  • 24 mini peanut butter cups (unwrapped)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C). Lightly grease a mini muffin tin or line it with paper liners.
  2. Mix Wet Ingredients: In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla until well combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  4. Form Dough Balls: Roll the dough into 1-inch balls and place one ball in each mini muffin cup.
  5. Bake: Bake for 8–10 minutes, or until the tops are just set and lightly golden.
  6. Add Topping: Immediately press a mini peanut butter cup into the center of each cookie while still warm.
  7. Cool and Serve: Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
