Chicken Parmesan Pasta:
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts (cut into bite-sized pieces)
- Salt and pepper to taste
- 3 cloves garlic (minced)
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- 12 ounces uncooked penne or rotini pasta
- 1 (24-ounce) jar marinara sauce
- 3 cups low-sodium chicken broth
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil or parsley (optional)
- 1/2 cup seasoned breadcrumbs (optional for topping)
- 1 tablespoon butter (if using breadcrumbs)
Instructions
- Heat olive oil in a large skillet or Dutch oven. Season chicken with salt and pepper, cook until browned.
- Stir in garlic, Italian seasoning, and red pepper flakes. Cook until fragrant.
- Add pasta, marinara sauce, and chicken broth. Bring to a boil, then cover and simmer until pasta is tender.
- Stir in mozzarella and Parmesan cheeses. Remove from heat and garnish with basil or parsley.
- Optional crispy topping: Melt butter, toast breadcrumbs, and sprinkle over the dish.
Notes
- For a lighter version, use whole wheat pasta and part-skim cheese.
- You can also use cooked rotisserie chicken for a quicker meal.
