Chicken Parmesan Pasta:

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts (cut into bite-sized pieces)
  • Salt and pepper to taste
  • 3 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 12 ounces uncooked penne or rotini pasta
  • 1 (24-ounce) jar marinara sauce
  • 3 cups low-sodium chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil or parsley (optional)
  • 1/2 cup seasoned breadcrumbs (optional for topping)
  • 1 tablespoon butter (if using breadcrumbs)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven. Season chicken with salt and pepper, cook until browned.
  2. Stir in garlic, Italian seasoning, and red pepper flakes. Cook until fragrant.
  3. Add pasta, marinara sauce, and chicken broth. Bring to a boil, then cover and simmer until pasta is tender.
  4. Stir in mozzarella and Parmesan cheeses. Remove from heat and garnish with basil or parsley.
  5. Optional crispy topping: Melt butter, toast breadcrumbs, and sprinkle over the dish.
