  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 3 cloves garlic (minced)
  • 1 (20-ounce) package refrigerated cheese tortellini
  • 1 (14.5-ounce) can diced tomatoes (with juices)
  • 1 ½ cups low-sodium chicken broth
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 cups fresh spinach (optional)
  • ½ cup heavy cream
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Heat olive oil: Heat olive oil in a large skillet over medium-high heat.
  2. Cook sausage: Add sausage to the skillet and cook until browned, breaking it up with a spoon, about 5–7 minutes. Add garlic and sauté.
  3. Add ingredients: Stir in tortellini, diced tomatoes, chicken broth, Italian seasoning, red pepper flakes, salt, and pepper. Simmer covered for 7–9 minutes.
  4. Finish: Uncover, stir in spinach, add cream, mozzarella, and Parmesan. Stir until cheese melts and sauce is creamy.
  5. Serve: Garnish with basil or parsley and extra Parmesan.

Notes

  • Frozen tortellini can be used—just increase the cooking time slightly.
  • Swap spinach for kale or arugula, or add sautéed mushrooms or zucchini for extra vegetables.
