- 1 tablespoon olive oil
- 1 pound Italian sausage (mild or spicy, casings removed)
- 3 cloves garlic (minced)
- 1 (20-ounce) package refrigerated cheese tortellini
- 1 (14.5-ounce) can diced tomatoes (with juices)
- 1 ½ cups low-sodium chicken broth
- ½ teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 2 cups fresh spinach (optional)
- ½ cup heavy cream
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil: Heat olive oil in a large skillet over medium-high heat.
- Cook sausage: Add sausage to the skillet and cook until browned, breaking it up with a spoon, about 5–7 minutes. Add garlic and sauté.
- Add ingredients: Stir in tortellini, diced tomatoes, chicken broth, Italian seasoning, red pepper flakes, salt, and pepper. Simmer covered for 7–9 minutes.
- Finish: Uncover, stir in spinach, add cream, mozzarella, and Parmesan. Stir until cheese melts and sauce is creamy.
- Serve: Garnish with basil or parsley and extra Parmesan.
Notes
- Frozen tortellini can be used—just increase the cooking time slightly.
- Swap spinach for kale or arugula, or add sautéed mushrooms or zucchini for extra vegetables.
