Cherry Tomatoes (halved):

Onion (thinly sliced):

Garlic (sliced):

Baby Spinach:

  • 2 cups

Fresh Basil Leaves:

  • 1/4 cup

Vegetable or Chicken Broth:

  • 4 cups

Olive Oil:

  • 2 tablespoons

Salt:

  • 1/2 teaspoon

Black Pepper:

  • 1/4 teaspoon

Red Pepper Flakes (optional):

  • 1/4 teaspoon

Grated Parmesan Cheese (optional):

  • 1/2 cup

Instructions

  1. In a large deep skillet or sauté pan, combine the spaghetti, cherry tomatoes, onion, garlic, spinach, basil, and broth.
  2. Drizzle with olive oil and season with salt, black pepper, and red pepper flakes if using.

  3. Bring to a boil over high heat. Once boiling, reduce heat to medium and cook uncovered for about 9–11 minutes, stirring frequently to prevent sticking and to help the pasta absorb the liquid.
  4. Continue cooking until the pasta is al dente and most of the liquid is absorbed, leaving a light sauce.

  5. Remove from heat and stir in Parmesan cheese if desired.
  6. Serve immediately with extra basil or cheese on top.

  • Swap spinach for kale or arugula depending on what you have on hand.
