- 1/4 cup shredded coconut (optional)
- 1/2 teaspoon vanilla extract

Instructions
- Combine Ingredients: In a large mixing bowl, combine the oats, peanut butter, honey or maple syrup, flaxseed, chocolate chips, shredded coconut (if using), vanilla extract, and salt. Stir until well combined.
- Chill Mixture: Cover the bowl and refrigerate the mixture for 20–30 minutes to firm up.
- Roll into Balls: Once chilled, roll the mixture into 1-inch balls using your hands or a small cookie scoop.
- Store: Place the energy bites in an airtight container and store in the refrigerator for up to 1 week or freeze for longer storage.
