Description

  • 1/2 cup natural peanut butter (or almond butter)
  • 1/3 cup honey or maple syrup
  • 1/2 cup ground flaxseed
  • 1/4 cup mini chocolate chips
  • 1/4 cup shredded unsweetened coconut (optional)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a large bowl, combine oats, peanut butter, honey, ground flaxseed, chocolate chips, shredded coconut (if using), vanilla extract, and salt. Stir well until all ingredients are fully incorporated.
  2. Refrigerate the mixture for 20–30 minutes to make it easier to handle.
  3. Once chilled, use a small cookie scoop or your hands to roll the mixture into 1-inch balls.
  4. Place on a parchment-lined tray and refrigerate or freeze until firm.
  5. Store in an airtight container in the fridge for up to 1 week or freeze for up to 2 months.
