- 1/2 cup natural peanut butter (or almond butter)
- 1/3 cup honey or maple syrup
- 1/2 cup ground flaxseed
- 1/4 cup mini chocolate chips
- 1/4 cup shredded unsweetened coconut (optional)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a large bowl, combine oats, peanut butter, honey, ground flaxseed, chocolate chips, shredded coconut (if using), vanilla extract, and salt. Stir well until all ingredients are fully incorporated.
- Refrigerate the mixture for 20–30 minutes to make it easier to handle.
- Once chilled, use a small cookie scoop or your hands to roll the mixture into 1-inch balls.
- Place on a parchment-lined tray and refrigerate or freeze until firm.
- Store in an airtight container in the fridge for up to 1 week or freeze for up to 2 months.
