- 1 pound flank steak or sirloin steak
- 2 tablespoons olive oil (divided)
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika

For the Bowl:
- 2 cups cooked quinoa or rice
- 1 cup cherry tomatoes (halved)
- 1 cup cucumber (diced)
- 1/2 cup red onion (thinly sliced)
- 1/2 cup Kalamata olives (pitted and halved)
- 1/2 cup crumbled feta cheese
- 1/4 cup hummus
- Lemon wedges for serving
- Fresh parsley for garnish (optional)
Instructions
- Season and Cook the Steak: Pat the steak dry and season with 1 tablespoon olive oil, oregano, garlic powder, paprika, salt, and pepper. Cook on a grill pan or skillet for 4-5 minutes per side, then let rest for 5 minutes.
- Prepare the Bowls: Divide quinoa or rice between 4 bowls. Arrange tomatoes, cucumber, onion, olives, and feta. Top with sliced steak, hummus, and lemon juice. Garnish with parsley.
