Description

This Mediterranean Lentil Salad is a refreshing and nutritious dish packed with protein and flavor. Perfect for a light meal or as a side dish for a potluck or barbecue.


Ingredients

Lentil Salad:

  • 1 cup dry green or brown lentils (rinsed)
  • 3 cups water or low-sodium vegetable broth

Veggies:

  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup Kalamata olives (sliced)

Additional:

  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh mint (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon red wine vinegar
  • 1 garlic clove (minced)
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Cook Lentils: In a medium saucepan, combine lentils and water or broth. Simmer until tender.
  2. Prepare Salad: In a large bowl, mix lentils, tomatoes, cucumber, onion, olives, feta, parsley, and mint.
  3. Make Dressing: Combine olive oil, lemon juice, vinegar, garlic, oregano, salt, and pepper. Pour over salad.
  4. Chill: Refrigerate for at least 30 minutes to blend flavors. Serve chilled or at room temperature.
