- 1/2 cup chopped dried apricots
- 1/2 cup chopped walnuts
- 1/4 cup chopped pistachios
- 1/4 cup raisins or golden raisins
- 2 tablespoons orange zest
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease or line a 9×5-inch loaf pan with parchment paper.
- Mix dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine wet ingredients: In another bowl, whisk the olive oil, honey (or maple syrup), eggs, Greek yogurt, and vanilla until smooth. Add the wet ingredients to the dry ingredients and stir until just combined.
- Add fruits and nuts: Gently fold in the figs, apricots, walnuts, pistachios, raisins, and orange zest.
- Bake: Pour the batter into the prepared loaf pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
