Description

Wet Ingredients:

  • 1/2 cup olive oil
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1/2 cup Greek yogurt
  • 1 teaspoon vanilla extract

  • 1/2 cup chopped dried figs
  • 1/2 cup chopped dried apricots
  • 1/2 cup chopped walnuts
  • 1/4 cup chopped pistachios
  • 1/4 cup raisins or golden raisins
  • 2 tablespoons orange zest

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease or line a 9×5-inch loaf pan with parchment paper.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Combine wet ingredients: In another bowl, whisk the olive oil, honey (or maple syrup), eggs, Greek yogurt, and vanilla until smooth. Add the wet ingredients to the dry ingredients and stir until just combined.
  4. Add fruits and nuts: Gently fold in the figs, apricots, walnuts, pistachios, raisins, and orange zest.
  5. Bake: Pour the batter into the prepared loaf pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
