  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat oven: Preheat oven to 375°F.
  2. Sauté vegetables: In a small oven-safe skillet or baking dish, heat olive oil over medium heat. Add red onion and cook until slightly softened. Stir in garlic, cherry tomatoes, roasted red peppers, and olives. Season with oregano, red pepper flakes, salt, and pepper. Cook until tomatoes begin to soften.
  3. Add eggs: Remove from heat and make wells in the mixture. Crack an egg into each well. Sprinkle feta cheese over the top.
  4. Bake: Transfer the skillet to the oven and bake for 8–12 minutes, until the egg whites are set but yolks are slightly runny.
  5. Garnish and serve: Remove from oven, garnish with fresh parsley or basil, and serve immediately with warm pita or crusty bread.
