Mashed Potato Cheese Puffs:
- 2 cups cold mashed potatoes
- 1 large egg
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped green onions or chives
- 2 tablespoons all-purpose flour
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Nonstick spray or butter for greasing muffin tin
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and lightly grease a mini muffin tin with nonstick spray or butter.
- Mix the ingredients: In a large bowl, combine mashed potatoes, egg, cheddar cheese, Parmesan, green onions, flour, garlic powder, salt, and pepper.
- Fill the muffin tin: Spoon the mixture into the prepared mini muffin tin, filling each cup about 3/4 full.
- Bake: Bake for 20–25 minutes until golden brown and crisp. Let cool for 5 minutes before serving warm.
