Mashed Potato Cheese Puffs:

  • 2 cups cold mashed potatoes
  • 1 large egg
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions or chives
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Nonstick spray or butter for greasing muffin tin

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and lightly grease a mini muffin tin with nonstick spray or butter.
  2. Mix the ingredients: In a large bowl, combine mashed potatoes, egg, cheddar cheese, Parmesan, green onions, flour, garlic powder, salt, and pepper.
  3. Fill the muffin tin: Spoon the mixture into the prepared mini muffin tin, filling each cup about 3/4 full.
