Instructions
- Preheat Oven: Preheat your oven to 375°F to get it ready for baking the casserole later.
- Cook Potatoes: Place the peeled and chopped potatoes in a large pot, cover with cold water, add a generous pinch of salt, then bring to a boil. Cook for 15–20 minutes until potatoes are fork-tender.
- Drain and Mash: Drain the potatoes well and return them to the pot. Add cream cheese, sour cream, warmed milk, butter, garlic powder, salt, and pepper. Mash until the mixture is smooth and creamy.
- Mix Cheese and Onions: Stir in 1 cup of shredded cheddar cheese and half of the green onions or chives if you are using them.
- Assemble Casserole: Spread the mashed potatoes evenly into a greased 9×13-inch baking dish.
- Add Toppings: Sprinkle the remaining ½ cup of cheddar cheese over the top and add crumbled bacon if desired.
- Bake: Bake uncovered for 20–25 minutes, or until the cheese is melted and the casserole is heated through.
- Garnish and Serve: Garnish with the remaining green onions before serving for a fresh finish.
