- 1 tablespoon olive oil
- 3 cloves garlic, minced
- ½ teaspoon red pepper flakes (optional)
- ¾ cup chicken broth
- ½ cup heavy cream
- ½ cup grated Parmesan cheese
- ½ cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Chopped fresh basil or parsley for garnish (optional)
Instructions
- Preheat oven to 400°F: Line a baking sheet with parchment paper.
- Make the meatballs: Combine ground chicken, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Form into meatballs and bake for 18–20 minutes.
- Prepare the sauce: Sauté garlic and red pepper flakes in olive oil. Add chicken broth, heavy cream, Parmesan, sun-dried tomatoes, and Italian seasoning. Simmer until slightly thickened.
- Combine: Add cooked meatballs to the sauce and simmer for 3–5 minutes. Garnish with basil or parsley before serving.
