  • 2 large eggs
  • 2 tablespoons lemon zest
  • ¼ cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • ½ cup sour cream or Greek yogurt
  • 1 cup fresh or frozen blueberries (tossed in 1 tablespoon flour)

Lemon Glaze:

  • ½ cup powdered sugar
  • 12 tablespoons fresh lemon juice

Instructions

  1. Preheat oven and prepare the pan: Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar: In a large mixing bowl, cream butter and sugar until light and fluffy.
  4. Add wet ingredients: Beat in eggs one at a time, then add lemon zest, lemon juice, and vanilla. Mix in sour cream until smooth.
  5. Combine wet and dry ingredients: Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in blueberries gently.
  6. Bake: Pour batter into prepared loaf pan and bake for 50 to 60 minutes, until a toothpick inserted in the center comes out clean.
  7. Cool and glaze: Cool in pan for 10 minutes, then transfer to a wire rack. For glaze, whisk powdered sugar with lemon juice and drizzle over cooled bread.
