For the garlic herb chicken:
- 4 boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon chopped fresh rosemary (or 1 tsp dried)
- 1 tablespoon chopped fresh thyme (or 1 tsp dried)
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- 1 tablespoon butter
For the mashed potatoes:
- 2 pounds Yukon Gold or russet potatoes, peeled and cubed
- 1/2 cup whole milk, warmed
- 1/4 cup unsalted butter
- Salt and pepper to taste
For the glazed carrots:
- 1 pound carrots, peeled and sliced into sticks or coins
- 2 tablespoons butter
- 2 tablespoons brown sugar
- 1 tablespoon honey
- Pinch of salt
- Chopped fresh parsley for garnish (optional)
Instructions
- Make the garlic herb chicken: In a small bowl, mix olive oil, garlic, rosemary, thyme, paprika, salt, pepper, and lemon juice. Rub the mixture all over the chicken. Heat a large skillet over medium-high heat. Add a drizzle of oil and sear the chicken for 4–5 minutes per side until golden and cooked through. During the last minute of cooking, add 1 tablespoon butter and spoon the melted butter and herbs over the chicken. Remove from heat and let rest.
- Make the mashed potatoes: Boil the potatoes in salted water until fork-tender, about 15 minutes. Drain well. Mash the potatoes with butter and warmed milk until smooth and creamy. Season with salt and pepper to taste.
- Make the glazed carrots: In a medium skillet over medium heat, melt the butter. Add the carrots and cook for 4–5 minutes. Stir in brown sugar, honey, and a pinch of salt. Continue cooking for 5–7 minutes more until carrots are tender and glazed.
Notes
- You can marinate the chicken up to 24 hours in advance for extra flavor.
- Add a splash of chicken broth or cream to the mashed potatoes for added richness.
- Glazed carrots can be made with maple syrup instead of honey.
