Beef Chuck Roast:
- 3–4 pounds beef chuck roast
Seasoning:

- 2 carrots (chopped)
- 2 celery stalks (chopped)
- 4 cloves garlic (minced)
Sauce:
- 1 tablespoon tomato paste
- 1 cup dry red wine
- 1 can (28 oz) crushed tomatoes
- 1 cup beef broth
- 2 bay leaves
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes (optional)
Garnish:
- Fresh parsley or basil for garnish
Instructions
- Prepare the Beef: Pat the beef roast dry with paper towels and season with salt and pepper.
- Sear the Beef: In a Dutch oven, sear the beef on all sides until browned. Remove and set aside.
- Cook the Vegetables: Add onion, carrots, and celery to the pot and cook until softened. Stir in garlic and tomato paste.
- Add Liquids and Seasonings: Pour in red wine, add crushed tomatoes, beef broth, herbs, and red pepper flakes.
- Braise the Beef: Return the beef to the pot, simmer covered for 3–3 1/2 hours until tender.
- Finish and Serve: Discard bay leaves, shred or slice the beef, and return it to the sauce. Serve hot over your choice of accompaniment, garnished with fresh herbs.
