Mixed Olives:
- 2 cups mixed olives (green and black, pitted or unpitted)
Marinade:
- 2 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- 2 cloves garlic (smashed)
- 1 teaspoon lemon zest
- ½ teaspoon crushed red pepper flakes
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- 1 sprig fresh rosemary (or ½ teaspoon dried)
- 1 tablespoon chopped fresh parsley (optional)
- Salt and black pepper to taste
Instructions
- Prepare Marinade: In a medium bowl, combine olives, olive oil, red wine vinegar, smashed garlic, lemon zest, red pepper flakes, oregano, thyme, and rosemary. Toss to coat all olives. Season with salt and pepper.
- Marinate: Cover and refrigerate for at least 2 hours, preferably overnight, to develop flavors.
- Serve: Bring olives to room temperature before serving. Optional: sprinkle with fresh parsley.
Notes
- Use a combination of Castelvetrano, Kalamata, and green Cerignola olives for variety.
- These marinated olives keep well refrigerated for up to a week.
