Description

These Italian Marinated Olives are a flavorful and easy appetizer that is perfect for entertaining. The combination of olives, herbs, and zesty flavors makes for a delicious addition to any antipasto platter.

Mixed Olives:

  • 2 cups mixed olives (green and black, pitted or unpitted)

Marinade:

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 2 cloves garlic (smashed)
  • 1 teaspoon lemon zest
  • ½ teaspoon crushed red pepper flakes
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 sprig fresh rosemary (or ½ teaspoon dried)
  • 1 tablespoon chopped fresh parsley (optional)
  • Salt and black pepper to taste

Instructions

  1. Prepare Marinade: In a medium bowl, combine olives, olive oil, red wine vinegar, smashed garlic, lemon zest, red pepper flakes, oregano, thyme, and rosemary. Toss to coat all olives. Season with salt and pepper.
  2. Marinate: Cover and refrigerate for at least 2 hours, preferably overnight, to develop flavors.
  3. Serve: Bring olives to room temperature before serving. Optional: sprinkle with fresh parsley.

Notes

  • Use a combination of Castelvetrano, Kalamata, and green Cerignola olives for variety.
