Description

Indulge in the tropical flavors of this classic Hummingbird Cake. Moist layers of banana-pineapple cake are stacked high and slathered with rich cream cheese frosting, creating a decadent Southern treat that’s perfect for any occasion.

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon

Wet Ingredients:

  • 3 large eggs
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 (8-ounce) can crushed pineapple in juice (do not drain)
  • 2 cups mashed ripe bananas (about 4 medium)
  • 1 cup chopped pecans (plus extra for topping, optional)

For the cream cheese frosting:

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (as needed for consistency)

Instructions

  1. Preheat oven to 350°F. Grease and flour three 9-inch round cake pans, or line with parchment paper.
  2. In a large bowl, whisk together the dry ingredients. In a separate bowl, beat the wet ingredients until combined. Stir in pineapple, bananas, and pecans.
  3. Pour wet ingredients into dry ingredients and mix until just combined. Divide batter among pans.
  4. Bake for 25–30 minutes, or until a toothpick comes out clean. Cool in pans for 10 minutes, then transfer to wire racks to cool.
  5. To make frosting, beat cream cheese and butter until smooth. Gradually add sugar and vanilla, beating until fluffy. Add milk if needed for consistency.
  6. Frost the cakes by stacking and spreading frosting between layers and over the top and sides. Garnish with extra pecans if desired.

Notes

  • This cake tastes even better the next day. Store covered in the refrigerator for up to 5 days.
