Description

These Honey Mustard Potatoes are a flavorful and easy side dish that pairs perfectly with any meal. The combination of Dijon and whole grain mustards, honey, and garlic creates a delicious glaze that coats the tender baby potatoes. Roasted to golden perfection, these potatoes are a crowd-pleaser and a great addition to your dinner table.

Ingredients

Scale

Potatoes:

  • 2 pounds baby potatoes (halved)

Mustard Glaze:

  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 1/2 tablespoons honey
  • 3 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Garnish:

  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the mustard glaze: In a large bowl, whisk together olive oil, Dijon mustard, whole grain mustard, honey, garlic, thyme, salt, and pepper.
  3. Coat the potatoes: Add the halved potatoes to the bowl with the mustard glaze and toss until fully coated.
  4. Roast the potatoes: Spread the potatoes in a single layer on the prepared baking sheet, cut side down. Roast for 35–40 minutes, flipping halfway through, until golden brown and fork-tender.
  5. Garnish and serve: Remove from the oven and garnish with fresh parsley if desired. Serve hot.

Notes

  • For extra crispiness, broil the potatoes for the last 2–3 minutes.
  • These potatoes pair well with grilled meats or roasted vegetables and can be made ahead and reheated in the oven.
