Dough:
- 2 1/4 teaspoons active dry yeast (1 packet)

- 2 1/2 to 3 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon olive oil
Instructions
- Prepare the Dough: In a large bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy. Stir in 2 1/2 cups of flour, salt, and olive oil until a shaggy dough forms.
- Knead the Dough: Knead by hand or with a mixer for 8–10 minutes, adding more flour as needed, until the dough is smooth and elastic.
- Rise the Dough: Place the dough in a lightly oiled bowl, cover, and let rise in a warm spot for 1 hour or until doubled in size.
- Shape and Cook: Punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball, then flatten into circles. Cook in a skillet or oven until puffed and golden.
- Serve: Cover warm pitas with a clean towel to keep them soft.
Notes
- For whole wheat pita, substitute 1 cup of the flour with whole wheat flour.
- Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
