Instructions

  1. Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. Wet Ingredients: In another bowl, beat the egg and mix in the milk, melted butter, and vanilla extract if using.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined—do not overmix; a few lumps are okay.
  4. Let the batter rest for 5–10 minutes.
  5. Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Pour about 1/4 cup of batter per pancake onto the skillet.
  7. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes.
  8. Flip and cook for another 1–2 minutes until golden brown and cooked through.
  9. Repeat with the remaining batter.
  10. Serve warm with syrup, fruit, or toppings of choice.

Notes

  • You can add blueberries, chocolate chips, or sliced bananas to the batter for extra flavor.
