Base Ingredients:
- 1 1/2 cups old-fashioned rolled oats
- 1/2 cup almond butter (or peanut butter)
- 1/3 cup honey or maple syrup
Additional Ingredients:
- 1/2 cup chopped almonds or walnuts
- 1/3 cup chopped dried dates or figs
- 1/4 cup ground flaxseed
- 1/4 cup chia seeds
- 1/4 cup mini dark chocolate chips (optional)
- 1/4 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- pinch of salt
Instructions
- Prepare the Base: Line an 8×8-inch pan with parchment paper. In a large bowl, mix together the oats, chopped nuts, dried fruit, flaxseed, chia seeds, cinnamon, and salt.
- Mix Wet Ingredients: In a small saucepan, heat almond butter and honey until smooth. Remove from heat, add vanilla extract, and pour over dry ingredients. Mix well.
- Add Final Touches: Fold in chocolate chips if desired. Press mixture into the pan firmly and refrigerate for at least 1 hour.
- Cut and Store: Once set, cut into bars or squares. Store in the refrigerator or freezer.
