Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare dry ingredients: In a medium bowl, whisk together the oats, flour, baking soda, cinnamon, and salt.
- Combine wet ingredients: In a separate large bowl, whisk together the melted coconut oil, honey (or maple syrup), egg, vanilla extract, and applesauce until well combined.
- Mix dry and wet ingredients: Gradually stir the dry ingredients into the wet ingredients until a dough forms.
- Add mix-ins: Fold in the raisins or chocolate chips and nuts, if using.
- Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, flatten each cookie, and bake for 10–12 minutes until lightly golden.
- Cool: Let the cookies cool on the baking sheet before transferring to a wire rack to cool completely.

- For a vegan version, replace the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water).
