- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small yellow onion (diced)
- 3 garlic cloves (minced)
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup uncooked orzo
- 2 cups low-sodium beef or chicken broth
- 1 can (14.5 ounces) diced tomatoes (with juice)
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley or basil (optional)
- red pepper flakes for heat (optional)
Instructions
- In a large skillet or sauté pan, heat olive oil over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5–6 minutes. Drain excess fat if needed.
- Add the diced onion and cook for 2–3 minutes until softened. Stir in the garlic, oregano, paprika, salt, and pepper. Cook for another 30 seconds until fragrant.
- Stir in the uncooked orzo, broth, and diced tomatoes with their juices. Bring to a boil, then reduce heat to a simmer. Cover and cook for 10–12 minutes, stirring occasionally, until the orzo is tender and the liquid is mostly absorbed.
- Remove from heat and stir in the Parmesan cheese. Adjust seasoning if needed. Let sit uncovered for a few minutes to thicken, then sprinkle with fresh herbs or red pepper flakes if using.
