  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small yellow onion (diced)
  • 3 garlic cloves (minced)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup uncooked orzo
  • 2 cups low-sodium beef or chicken broth
  • 1 can (14.5 ounces) diced tomatoes (with juice)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley or basil (optional)
  • red pepper flakes for heat (optional)

Instructions

  1. In a large skillet or sauté pan, heat olive oil over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5–6 minutes. Drain excess fat if needed.
  2. Add the diced onion and cook for 2–3 minutes until softened. Stir in the garlic, oregano, paprika, salt, and pepper. Cook for another 30 seconds until fragrant.
  3. Stir in the uncooked orzo, broth, and diced tomatoes with their juices. Bring to a boil, then reduce heat to a simmer. Cover and cook for 10–12 minutes, stirring occasionally, until the orzo is tender and the liquid is mostly absorbed.
  4. Remove from heat and stir in the Parmesan cheese. Adjust seasoning if needed. Let sit uncovered for a few minutes to thicken, then sprinkle with fresh herbs or red pepper flakes if using.
